OFFLINE COMPETITION
Plating Dessert
The Plating Dessert Competition is an event that requires participants to present dessert dishes with attractive, creative, and aesthetic presentations. The main focus of this competition is not only on taste but also on plating techniques, color balance, texture, and creativity in arranging dessert elements on a plate. Carrying the theme "Cultural Flavors Without Waste," this competition challenges participants to serve desserts that showcase cultural flavors while applying sustainability principles. Participants are expected to use ingredients efficiently, minimize waste, and incorporate traditional elements in their presentation. Through this theme, the competition is not just a platform for creativity, but also a push toward more eco-friendly culinary innovations.

General Requirements
Participants must be active students in the Tourism Department (D1 to S1), proven with a Student ID or a Letter of Enrollment.
Participants are not allowed to show or wear any institutional identity such as logos, flags, uniforms, jackets, or initials, either in their work or during the competition.
Registration must be completed via the official KPI website (kpi.polban.ac.id) no later than April 23, 2025.
Each university may send up to 3 representatives.
Participants must wear kitchen uniforms without any institutional logo (identities will be covered).
Participants must join the official WhatsApp group.
Participants must attend the online technical meeting on May 05, 2025 via the platform provided.
Participants are encouraged to attend the opening and closing ceremonies on-site at the Main Auditorium of Politeknik Negeri Bandung. If unable to attend, they may join virtually via KPI 15’s YouTube live stream.
Institutional identity may only be shown during the awarding session.
Participants must arrive no later than 30 minutes before the event starts.
The jury’s decision is final and cannot be contested.
Specific Requirements
This is an individual competition.
Participants must bring their own food and accessories.
Dishes must follow the theme Cultural Flavors Without Waste.
The committee does not provide any tools or equipment.
Participants are not allowed to borrow or take any hotel property for competition use.
All necessary tools and ingredients (e.g., plates, cutting boards) must be brought from home.
Main desserts may be pre-prepared and brought to the venue.
To ensure order and safety, all equipment and ingredients must be brought in labeled boxes/containers with the participant’s name (not the institution’s name).
Fragile or perishable ingredients should be packed securely in a labeled container; ice cubes will be provided by the hotel.
Participants must wear full chef attire including apron, gloves, safety shoes, name tag, head covering, napkin, food tag, small knife, and face mask.
Proper kitchen grooming standards must be followed.
Participants must arrive 30 minutes before the competition begins.
Competition Mechanics
Each participant must prepare one traditional Indonesian dessert.
Two portions must be made: one for judging and one for display.
Desserts must be traditional Indonesian.
Participants must bring their own garnish.
The competition runs for 45 minutes: 30 minutes plating, 5 minutes briefing, 10 minutes judging and tasting session with Q&A.
Late arrivals may still join the competition but will not be given additional time.
The jury’s decision is final and cannot be contested.
Violations
Registered participants cannot be replaced for any reason.
Participants who are absent or late on the event day without notifying the committee will be considered withdrawn.
Participants who display institutional identity, cause disruption, cheat, or jeopardize others’ safety will be disqualified and will not receive any refund.
Cheating includes but is not limited to:
Copying or mimicking another participant’s plating design
Borrowing tools or materials from other participants during the competition
Deliberately hiding or damaging other participants’ tools or ingredients
Making inappropriate jokes, provoking others, using offensive language
Any action deemed disruptive to the competition atmosphere.
Any violation of the rules will result in disqualification.
Awards will be given
Winners of 1st, 2nd, and 3rd place in the offline competition will receive trophies and e-certificates. Shipping costs for trophies are the responsibility of the participants.
Objections/Complaints
Participants wishing to submit an objection or complaint regarding the jury’s decision may fill out the provided form with supporting evidence. An administrative fee will apply. If the complaint is proven valid and accepted, the fee will be refunded. If not accepted, the fee will be retained by the committee.
